Homemade Meat Pie

This is my boys favourite as its my aunty's recipe and they insist on it when we visit.

Its a great recipe for left over mince and is quick to prepare.  If you have any leftover Potato Hash, that can be used as a filling to make a meat and potato pie.

Ingredients

250g minced beef
2 oxo cubes
2 sheets ready made short crust pastry
Egg or cream to brush on pastry
Cornflour

Method

Put mince in small pan and cover with water.  Stir in oxo cubes and season.

Put lid on pan and cook on low heat for about an hour.  It has to be cooked slowly so the mince is soft.

Cover a dinner plate with 1 sheet of pastry and, using a slotted spoon, fill the pastry with the mince.

Turn the oven on to preheat to 150C

Turn up the heat on the gravy, take out a spoon full or two and mix with the cornflour.  Return to the pan and cook for a few minutes until it thickens.

Pour the gravy over the meat - you won't need it all - cover with the other sheet of pastry and press the edges down.  Prick the top then brush with egg or cream.

Bake in oven for about 30 mins until browned.

Serve with boiled potatoes smothered in butter and garden peas.
